They are the oldest, simplest, most natural, and handy way to flavour foods, preserve them and make them safer to consume, thanks to their antibacterial effect. For this reason, spices have always accompanied the history of humanity. Only recently have we begun to study the mechanisms of action on the human body, in which they carry out digestive, antioxidant, antidegenerative, anti-inflammatory and antiproliferative effects.
Spices are real superheroes in the kitchen!
Turmeric, for example, has an antioxidant and anti-cholesterol action.
Cinnamon, which has always been associated with the sweetness of pastry, promotes digestion, counteracting abdominal fermentation. And only recently has it also revealed unexpected abilities to reduce blood sugar, cholesterol, and triglyceride levels.
Ginger, used for centuries to control nausea and vomiting, is revealing many other interesting properties: it is anti-inflammatory, antioxidant, anticancer, pain reliever and hypoglycaemic.
Sicilian sumac, the story of an ancient superfood
Sicilian sumac is an ancient spice with a sour taste, obtained from the plant of the same name, halfway between lemon juice and vinegar.
Already known to the Egyptians and Greeks who used it as a mordant for dyeing fabrics, its scientific name denounces the use that was made of its bark and leaves as a tannic substance in vegetable tanning.
Thanks to the substances contained in the leaves, fruits and essential oil obtained from it, it has several virtues: it has antioxidant, antibacterial, antifungal, febrifugal, diuretic, and anti-inflammatory properties.
A real superfood in the kitchen!
Speziale: a casket to keep magical powders
Speziale: uno scrigno per custodire polveri magiche
With the aim of enhancing the infinite resources of spices and emphasizing the urgency of reducing packaging, Speziale was born. Basically, it is a container that helps preserving the best properties of spices.
It has been conceived in two versions that reminds a toolbox in its rectangular version and a sewing box in its circular version
A single spice box in which spices, special “tools” for the kitchen and for the body, can be stored individually.
The round version is more suitable for the table, since the spices are presented loose: like a sewing box, it accentuates the chromatic varieties of the spices.
The rectangular version allows to have the various aromas available both for the preparation of traditional recipes and for “medical” use, keeping them inside the bags.
Raffaella Guidobono, founder of Leftover and designer of the project, created by the artisans of Via Calderai in Palermo, declares ,declares “Speziale contains the software for each recipe; it is a box that houses my magical, invigorating and antioxidants powders and emphasizes the nutritional supply of spices
rich in minerals and vitamins with its shape inspired by a toolbox of a craftsman. As the tools used by blacksmiths and carpenters fix structures and strengthen joints, the Superfoods in my diet are metaphorically tools and not mere ingredients.
It is no coincidence that my research started from the history of the use of Sumac, Rosemary and Cinnamon Regina in Mediterranean cuisine and their organoleptic qualities, to be kept in a jewellery box.”
A journey to rediscover ancient flavors
Speziale, a box designed to keep the spices and preserve their properties, derives its ancient name from the 1500’s Aromatic Masters, whose Church of Sant’Andrea, site of the guild of the ancient Palermo apothecaries, was not far from where the Florio’s, important family of traders who made known the sumac and its processing in Italy and abroad, opened their first spices shop in Palermo.
It seems that the precious tannin, extracted from Sicilian sumac, was highly sought after, and exported abroad due to its high quality and yield.
Used mainly for colouring and tanning leather, but also as an additive in wines, it seems that between the 1700s and 1800s there was no beam in Sicily that did not have a luxuriant sumacheto to be used precisely for these purposes.
