Aurora Zancanaro <\/strong>is a baker. Her background as a chemist, allows her to be 100% master of the principles of natural bread making. After a degree in chemistry and a few years as a researcher, she followed her secret love for bread-making.<\/p>\n

After attending many courses and several experiences in laboratories, bakeries, mills, on November 30th 2017, Aurora opened LePolveri<\/strong>, a 50 square meters shop, a small open-plan laboratory near the Basilica of Sant’Ambrogio in Milan. From 2023 Le Polveri doubles and opens the daytime bakery in Via Vespri Siciliani, also in Milan.<\/div>\n<\/div>\n

Atanor<\/strong> was born from the collaboration between Sara Bologna<\/strong> and Aurora Zancanaro<\/strong>, two contemporary alchemists. The first one is a designer who moves between symbols and signs to give life to objects imbued with magic and narratives; the second one, began her career as a chemist but then decided to dedicate herself to the art of bread, transforming the simplest elements of the earth – water and flour – into masterpieces to eat every day. Her bakery LePolveri <\/strong>is a laboratory in continuous fermentation. The team of alchemists is completed by Massimo<\/strong> from Soffieria Remark<\/strong>, who has refined the borosilicate glass processing technique.<\/p>\n

From this meeting a project was born for the care of sourdough<\/strong>, an element we can define as matrix of life or, better, pure alchemy.<\/div>\n<\/div>\n
